One Pan Prawn Fajitas

Ingredients (serves 1)

  • 8-10 uncooked prawns

  • 1/2 large pepper

  • 1/2 red onion

  • Corner of red cabbage

  • Handful of coriander

  • Spoon of sour cream + mayonnaise

  • Lime juice (to taste)

    For the seasoning:

  • Pepper

  • 1/2 tsp of red chilli powder

  • 1/2 tsp of garlic salt

  • 1 tsp cumin

  • 1 tsp paprika

  • 3 cloves of minced garlic

  • Drizzle of olive oil

Instructions

  1. Preheat the oven to 180C

  2. Slice the peppers & onion into thin strips.

  3. Add to a lined baking tray & season lightly with salt, pepper, paprika & olive oil.

  4. Add to the oven and bake for 8 mins.

  5. Meanwhile, pat the prawns dry, add them to a bowl & combine all of the seasonings into a paste. After the 8 mins is up, add alongside the peppers and onions on the baking tray & bake for 8-10 mins until cooked through.

  6. Slice up the cabbage & coriander, add to a bowl with the sour cream, mayo & lime juice. Mix well & set aside.
    Once everything is cooked through, assemble onto your heated wraps & top with a little avocado.
